During the cold winter months, comfort food seems to be at the top of my list when cooking for my family. Never has comfort food been so easy to make since I’ve purchased an Instant Pot! This delicious recipe that we are sharing with you is just one of the many things the Instant Pot can cook within minutes. It makes cooking for a family on a busy weeknight so much easier. Life can often get ahead of us and cooking healthy meals during the weeknight can become an arduous task.

Finding recipes for the Instant Pot is easy because it has become a popular must-have kitchen appliance. You’ll see from the recipe below how easy it is to make delicious meals the whole family will love, in a short amount of time.

My inspiration for this recipe is the “one dump meal” for the busy weeknight. We all want comfort foods when it is cold outside, especially with some of the record-low temperatures hitting some areas of Canada and the States right now!

But comfort foods often take a few hours to simmer and cook, making it difficult to plan on a weeknight. The instant pot cooks your whole meal in less than 10 minutes! That’s a godsend for a busy mom like me. The only effort you need to put in is to cook the ground beef and onions, and the rest of the ingredients get placed in the Instant Pot. Put the lid on, set the timer, and by the time you’ve cleaned your prep space and set the plates, it’s ready. How easy is that!

Don’t forget to place that cheese on the soup. It adds such body to the dish! This meal is nicely paired with some garlic toast and a Caesar salad. My children raved about this soup so it’s a real winner for all ages.

The only downfall? It was too hot to eat…and they had to wait. I hope you enjoy this recipe as much as my family does.

TCG Family Recipe - Lasagna Soup

A perfect dinner for a busy weeknight in the hottest new kitchen appliance. Get comfort food in an instant for the whole family!

  • For Soup:
  • 1 lb. of ground beef
  • ½ yellow onion, diced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • A dash of salt and pepper
  • 2 cloves of garlic, minced
  • 1 cup diced canned tomatoes
  • 1.2 litres of beef broth
  • 1 (710mL) jar of spaghetti sauce
  • 2 cups uncooked small shell noodles
  • For Topping:
  • 1 c. mozzarella
  • Ricotta cheese

  1. Set Instant Pot to Sauté and wait for it to warm up.
  2. Add ground beef, onions, and spices. Cook until ground beef is no longer pink. Turn Instant Pot off.
  3. Add remaining ingredients – including the uncooked pasta. Make certain to mix all ingredients together well in the Instant Pot. Not doing so occasionally causes the “BURN” light to come on. Omit the cheese as this is for topping.
  4. Select “Pressure Cook” on your instant Pot and use the +/- buttons to set your pressure cook time to 3 minutes. If you prefer your noodles softer, select 4 minutes for the cook time. It takes approximately 10 minutes to come to pressure; there is a lot of liquid in there.
  5. Do a quick release and remove the lid.
  6. Mix all ingredients well. Don’t forget this will be very hot!
  7. Top your soup with a dollop of Ricotta and some mozzarella, and enjoy!
